We are very excited to release our 2020 Napa Valley Sauvignon Blanc. Last year the fantastic response to our inaugural release put smiles on our faces, reassuring us that we are on the right path with our Sauvignon Blanc and our ongoing quest for zero defects. During the blending trials this year, we found we much we enjoyed utilizing toasted American Oak barrels. In response to this, we increased the amount of barrels we used in 2020, resulting in a blend of 10% concrete tank, 55% stainless steel, and 35% oak for the six-month fermentation and ageing period.
Continuing to respect both the powerful aromas and graceful texture great Sauvignon Blanc displays, our blend is 100% varietally pure and 100% Napa Valley, coming from two outstanding certified organic old vine vineyards in Yountville. Extra care was taken in the vineyard to ensure optimal ripeness. An extended cold fermentation and avoidance of malolactic fermentation capture the bright and opulent ZD style.
Ripe and complex, we got what we asked for with this wine. Bold aromas of white peach and candied pear lead into tropical lychee and vanilla. Surprisingly round on the palette, flavors of green apple and ripe citrus are complemented by refreshing acidity and clean minerality that lead into a long and complex finish of grapefruit that leaves you eager for more.
