The new release of ZD Wines’ Cabernet Sauvignon from Napa Valley is another example of our careful winemaking and unwavering commitment to producing world-class wines, even when faced with the many challenges of the 2020 harvest in Wine Country due to the wildfires. Through discerning selection of vineyard blocks and the ability to make subtle adjustments in winemaking, we produced this incredibly delicious wine that is the exceptional quality you’ve come to expect from ZD Wines.
Each vineyard lot was hand harvested and fermented separately in small stainless steel open-top fermenters. Hand punch downs during fermentation ensured a gentle extraction of color and tannin. The wines were then barrel aged for one-year American Oak barrels, after which our first blending trial tastings occurred. After final blending, the wine was returned to barrel and aged for an additional year before bottling.
This wine has a beautiful, deep ruby color. Bright aromas of black cherry, cassis, and tart raspberry mingle with hints of clove, star anise, and vanilla. The firm, yet ripe, tannins combine wonderfully with the core of dark fruit complemented with well-balanced acidity. This wine is drinking beautifully now and will continue to develop complexity for many years to come. Only 23 barrels were produced.
