This 2007 ZD Reserve Cabernet Sauvignon is an outstanding example of what the exceptional 2007 vintage had to offer! An early bud break, followed by a moderate to cool growing season and a nice warm finish led to beautiful, intensely flavored fruit with small clusters, great color and wonderfully balanced tannins. In addition to ZD’s organically farmed Rutherford Estate Vineyard, the fruit came from several small, intensely farmed vineyards in the eastern hills above the Oakville appellation. Each was fermented and barrel aged separately for one year before blending. After several blind tastings the reserve blend was then aged for an additional two years in American oak barrels.
Classic cassis, red plum and blackberry make up the core of dense ripe fruit in this wine. Subtle hints of toasted nuts, anise, clove and sweet vanilla add to the complexity. Finally, soft, velvety tannins envelop and carry the fruit to an incredibly long finish. Only 850 cases of this wine were produced.
