Zydeco Delights Goat Cheese Cups
paired with ZD Pinot Noir, Carneros

2 Pkgs. Athens Mini Fillo Dough Shells
1 (4 oz.) Package Crumbled Goat Cheese
4 Slices Bacon, Cooked, Crumbled
½ Cup Packed Fresh Basil, cut Chiffonade
2 Tablespoons Extra Virgin Olive Oil
3 Cloves Garlic, Minced
5 Large Roma Tomatoes, Seeded,Chopped, and Excess Liquid Drained
Salt & Fresh Ground Pepper to Taste

PREHEAT oven to 400 degrees

HEAT olive oil in a 5” skillet over medium-low heat. Add minced garlic and sauté for 1 – 3 minutes until garlic and oil are fragrant. Do not allow garlic to brown!

DRIZZLE garlic and olive oil over chopped tomatoes in a medium sized bowl. Add basil, goat cheese, and bacon and mix with a fork. Season filling to taste with salt and fresh ground pepper.

PLACE fillo dough shells on an ungreased cookie sheet and put about 1tbls. filling in center of each.

BAKE 10-15 min. or until golden. Garnish with additional fresh basil.

MAKES approximately 30 appetizers
